White Bean and Pesto Bake

Ingredients
  

2 cans (15 oz each) white beans (cannellini or great northern), rinsed and drained

1 cup homemade or store-bought basil pesto

1 cup cherry tomatoes, halved

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/4 cup olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh basil leaves, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Baking Dish: Grease a medium-sized baking dish with olive oil.

      Mix the Ingredients: In a large mixing bowl, combine the rinsed white beans, basil pesto, minced garlic, oregano, cherry tomatoes, half of the mozzarella cheese, salt, and pepper. Stir gently to combine without mashing the beans.

        Transfer to Baking Dish: Pour the mixture into the prepared baking dish, spreading it out evenly.

          Add Cheese Topping: Sprinkle the remaining mozzarella cheese and grated Parmesan evenly over the top of the bean mixture.

            Bake: Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until the cheese is golden and bubbly.

              Garnish: Once out of the oven, let it cool for a few minutes. Garnish with fresh basil leaves before serving.
