8 oz vermicelli rice noodles

1 cup cooked shrimp, sliced in half lengthwise (or tofu for a vegetarian option)

1 cup carrots, julienned

1 cup cucumber, thinly sliced

1 cup red bell pepper, thinly sliced

1 cup fresh herbs (mint, cilantro, and basil), chopped

½ cup crushed peanuts

¼ cup fried shallots (optional)

Lime wedges for serving

For the dressing:

3 tbsp fish sauce (or soy sauce for vegetarian option)

2 tbsp rice vinegar

1 tbsp sugar

1 clove garlic, minced

1 small chili, finely sliced (adjust to taste)

1 tbsp sesame oil

Instructions
 

Prepare the Noodles: In a large pot, bring water to a boil. Add the vermicelli noodles and cook according to package instructions, usually about 3-5 minutes until tender. Drain and rinse under cold water to stop the cooking process. Set aside.

    Make the Dressing: In a small bowl, whisk together the fish sauce, rice vinegar, sugar, minced garlic, sliced chili, and sesame oil until the sugar is dissolved. Adjust seasoning according to taste.

      Combine Ingredients: In a large mixing bowl, add the cooked vermicelli noodles, shrimp (or tofu), carrots, cucumber, and bell pepper. Pour the dressing over the salad and toss gently to combine.

        Add Fresh Herbs: Gently fold in the chopped mint, cilantro, and basil. Be careful not to break the noodles too much.
