So, what exactly makes pancakes vegan? The traditional pancake recipe typically calls for ingredients such as eggs and milk, which are animal-derived. However, by substituting these ingredients with plant-based alternatives, we can create fluffy vegan pancakes that are just as satisfying. This transition to veganism not only caters to those following a plant-based diet but also appeals to health-conscious individuals looking to incorporate more wholesome ingredients into their meals.

Ingredients

1 cup all-purpose flour

2 tablespoons sugar (coconut sugar or maple sugar for a healthier option)

1 tablespoon baking powder

1/4 teaspoon salt

1 cup almond milk (or any plant-based milk)

1 tablespoon apple cider vinegar

2 tablespoons melted coconut oil (or any neutral oil)

1 teaspoon vanilla extract

Optional: 1/2 teaspoon cinnamon or 1/4 cup blueberries/chocolate chips for added flavor

Instructions

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

In a separate bowl, mix the almond milk and apple cider vinegar. Let it sit for about 5 minutes to curdle slightly, creating a buttermilk substitute.

Add the melted coconut oil and vanilla extract to the almond milk mixture, stirring well to combine.

Pour the wet ingredients into the dry ingredients and mix gently until just combined. Don't overmix; some lumps are okay. If desired, fold in cinnamon, blueberries, or chocolate chips.

Preheat a non-stick skillet or griddle over medium heat. Lightly grease with a little coconut oil or cooking spray if necessary.

Pour about 1/4 cup of the pancake batter onto the skillet for each pancake. Cook for 3-4 minutes or until bubbles form on the surface and the edges appear set. Flip carefully with a spatula and cook for another 2-3 minutes until golden brown.

Repeat with the remaining batter, adjusting heat as necessary to prevent burning.

Serve warm with maple syrup, fresh fruit, or a dollop of nut butter.
