Vanilla Crepes

Ingredients
  

1 cup all-purpose flour

2 large eggs

1 ¼ cups milk (whole or 2%)

2 tablespoons melted butter (plus extra for the pan)

2 tablespoons granulated sugar

1 teaspoon vanilla extract

A pinch of salt

Instructions
 

In a mixing bowl, whisk together the flour, eggs, and a pinch of salt until combined.

    Gradually add in the milk, whisking continuously to avoid lumps. The batter should be smooth and slightly runny.

      Stir in the melted butter, sugar, and vanilla extract. Let the batter rest for at least 15 minutes (this allows the gluten to relax).

        Heat a non-stick skillet over medium heat. Lightly grease it with a bit of melted butter.

          Pour about ¼ cup of batter into the pan while tilting it to spread the batter evenly across the surface.

            Cook for 1-2 minutes until the edges begin to lift and the bottom is golden brown. Flip the crepe and cook for another 30 seconds to 1 minute on the other side.

              Remove the crepe from the pan and place it on a plate. Repeat the process with the remaining batter, stacking the finished crepes on a plate and keeping them warm.

                Serve warm with your favorite fillings such as fresh fruit, whipped cream, or a drizzle of chocolate sauce.
