Ingredients

1 ½ lbs ground beef or turkey

1 cup mashed potatoes (prepared, preferably leftover)

1 cup shredded cheddar cheese

½ cup cooked bacon bits

½ cup finely chopped green onions (scallions)

1 large egg

1 cup breadcrumbs (preferably seasoned)

¼ cup milk

2 tbsp Worcestershire sauce

1 tsp garlic powder

1 tsp onion powder

½ tsp black pepper

½ tsp salt

½ cup barbecue sauce (for topping)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a loaf pan or line it with parchment paper.

Prepare Mixing Bowl: In a large mixing bowl, combine the ground beef (or turkey), mashed potatoes, shredded cheddar cheese, bacon bits, and green onions.

Combine Wet Ingredients: In a separate small bowl, whisk together the egg, milk, Worcestershire sauce, garlic powder, onion powder, black pepper, and salt until well-blended.

Mix Together: Pour the wet mixture into the large bowl with the meat and potato mix. Then, gently fold in the breadcrumbs until all the ingredients are thoroughly combined. Be careful not to overmix.

Shape the Meatloaf: Transfer the meat mixture into the prepared loaf pan, pressing it down evenly to form a loaf shape.

Apply Barbecue Sauce: Brush a generous layer of barbecue sauce over the top of the meatloaf for a delicious glaze.

Bake: Place the loaf in the preheated oven and bake for about 1 hour, or until the internal temperature reaches 160°F (70°C) and the meatloaf is cooked through.

Rest and Serve: Remove the meatloaf from the oven and let it rest for about 10 minutes before slicing. Serve warm with additional topping of cheese, bacon bits, and green onions if desired.
