2 boneless, skinless chicken breasts

8 oz penne pasta

2 cups cherry tomatoes, halved

3 cups fresh spinach

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1/2 cup grated Parmesan cheese

1 tsp Italian seasoning

2 tbsp olive oil

Salt and pepper to taste

Fresh basil leaves for garnish

Begin by cooking the penne pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

    In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt, pepper, and Italian seasoning. Sear the chicken in the skillet for about 6-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside to rest.

      In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Add cherry tomatoes and cook for about 3 minutes until they start to soften.

        Pour in the chicken broth and bring to a simmer. Reduce heat to low, then stir in the heavy cream, mixing well to combine.

          Slice the cooked chicken into strips and return to the skillet. Add fresh spinach and cooked penne pasta. Stir everything together, adding reserved pasta water as needed for creaminess.

            Sprinkle grated Parmesan cheese into the mixture, stirring until it has melted and everything is well coated. Adjust seasoning if necessary.

              Serve hot, garnished with fresh basil leaves and an extra sprinkle of Parmesan if desired.
