Ingredients

4 boneless, skinless chicken breasts

1 cup fresh pineapple juice

1/2 cup soy sauce

1/3 cup brown sugar

1 tablespoon apple cider vinegar

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 teaspoon red pepper flakes (adjust to taste)

2 tablespoons olive oil

1/4 cup green onions, chopped (for garnish)

1/4 cup sesame seeds (toasted, for garnish)

Salt and pepper, to taste

Instructions

Marinate the Chicken: In a medium bowl, combine pineapple juice, soy sauce, brown sugar, apple cider vinegar, garlic, ginger, and red pepper flakes. Whisk until the sugar is dissolved. Add the chicken breasts to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 1 hour (ideally 4 hours or overnight for best flavor).

Preheat the Grill: Preheat your grill or grill pan over medium-high heat. If using a grill, oil the grates lightly to prevent sticking.

Prepare the Chicken: Remove the chicken from the marinade, allowing the excess marinade to drip off. Season both sides of the chicken breasts with salt and pepper.

Grill the Chicken: Place the chicken on the grill and cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C) and the chicken is nicely caramelized. For an extra glaze, brush the chicken with some of the reserved marinade during the last few minutes of cooking.

Rest and Garnish: Once cooked, remove the chicken from the grill and let it rest for about 5 minutes to retain juices. Slice the chicken and arrange it on a serving platter.

Serve: Drizzle any leftover glaze over the sliced chicken and garnish with chopped green onions and toasted sesame seeds. Serve with steamed rice or a light salad for a complete meal.
