4 large ripe tomatoes, diced

1 medium onion, finely chopped

3 cloves garlic, minced

1/4 cup brown sugar

1/4 cup balsamic vinegar

1/4 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves, chopped (for garnish)

1 French baguette, sliced

Olive oil for drizzling

Fresh mozzarella, sliced (optional)

Instructions
 

Prepare the Tomato Jam:

    - In a medium saucepan over medium heat, add diced tomatoes, chopped onion, and minced garlic. Cook for about 5-7 minutes, stirring frequently until the mixture starts to soften.

      Add Sweetness and Flavor:

        - Stir in the brown sugar, balsamic vinegar, and red pepper flakes (if using). Season with salt and pepper to taste.

          Simmer the Mixture:

            - Reduce the heat to low and let the mixture simmer for about 20-25 minutes, or until it thickens into a jam-like consistency. Stir occasionally to prevent sticking.

              Prepare the Baguette:

                - While the tomato jam cooks, preheat your oven to 375°F (190°C). Arrange the sliced baguette on a baking sheet in a single layer.

                    Assemble the Bruschetta:

                      - Once the tomato jam is ready and the baguette slices are toasted, remove them from the oven.
