1 block (14 oz) firm tofu, drained and pressed

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon cornstarch

2 tablespoons vegetable oil

1 red bell pepper, sliced

1 cup broccoli florets

1 cup snap peas

2 cloves garlic, minced

1 teaspoon ginger, grated

3 green onions, chopped (reserve some for garnish)

1 tablespoon rice vinegar

Sesame seeds, for garnish

Prepare Tofu: Cut the pressed tofu into bite-sized cubes. In a bowl, toss the tofu with soy sauce and cornstarch, ensuring all pieces are evenly coated. Let marinate for 10 minutes.

    Heat the Pan: In a large skillet or wok, heat vegetable oil over medium-high heat. Add the marinated tofu and cook until golden and crispy on all sides, about 5-7 minutes. Remove and set aside.

      Sauté Vegetables: In the same skillet, add sesame oil. Once hot, add minced garlic, grated ginger, and chopped green onions. Sauté for about 1 minute until fragrant.

        Add Veggies: Toss in the sliced red bell pepper, broccoli florets, and snap peas. Stir-fry for about 4-5 minutes or until the vegetables are tender-crisp.

          Combine: Add the tofu back to the pan, drizzle with rice vinegar, and stir to combine all ingredients. Cook for an additional 1-2 minutes to heat through.

            Serve: Plate the stir-fry hot, garnishing with reserved green onions and a sprinkle of sesame seeds.
