Ingredients

2 cups canned chickpeas, drained and rinsed

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (red or yellow), diced

1/2 red onion, finely chopped

1/4 cup fresh parsley, chopped

1/4 cup feta cheese, crumbled

1/4 cup olive oil

2 tablespoons red wine vinegar

1 teaspoon Dijon mustard

Salt and pepper to taste

Optional: 1 avocado, sliced for topping

Instructions

In a large mixing bowl, combine the chickpeas, cherry tomatoes, cucumber, bell pepper, red onion, and parsley.

In a separate small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper until well blended to create the dressing.

Pour the dressing over the salad and toss gently to combine, ensuring that all the ingredients are coated.

Once mixed, add the crumbled feta cheese on top, and if using, gently incorporate the avocado slices for extra creaminess.

Serve immediately, or cover and refrigerate for up to an hour to let the flavors meld together. This salad tastes even better after resting!
