Tex-Mex cuisine has its roots deeply embedded in the history of Texas, where Mexican settlers brought their culinary traditions. Over time, these traditions blended with American flavors and cooking techniques, giving rise to a unique culinary genre that is both comforting and exciting. This fusion is evident in popular dishes such as nachos, enchiladas, and, of course, the Tex-Mex Chopped Chicken Salad.

Ingredients

2 cups cooked chicken breast, chopped

1 cup cherry tomatoes, halved

1 cup corn kernels (fresh or frozen, thawed)

1 small red onion, diced

1 bell pepper (red or yellow), diced

1 avocado, diced

1 cup black beans, drained and rinsed

1 cup romaine lettuce, chopped

1 cup tortilla strips (for crunch)

1/2 cup shredded cheese (cheddar or Mexican blend)

1/4 cup fresh cilantro, chopped

Juice of 2 limes

3 tablespoons olive oil

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

Instructions

Prepare the Dressing: In a small bowl, whisk together lime juice, olive oil, cumin, chili powder, salt, and pepper until well combined. Set aside.

Chop the Veggies: In a large mixing bowl, add chopped lettuce, tomatoes, corn, red onion, bell pepper, avocado, and black beans. Gently toss to combine all the ingredients.

Incorporate the Chicken: Add the chopped chicken to the vegetable mix and toss gently to ensure the chicken is evenly distributed without mashing the avocado.

Add Cheese and Cilantro: Sprinkle the shredded cheese and chopped cilantro over the salad and give it another gentle toss.

Dress the Salad: Drizzle the prepared dressing over the salad and toss again until everything is well coated.

Final Touch: Just before serving, mix in the tortilla strips to add crunch. Serve immediately and enjoy!
