1 lb (450g) boneless, skinless chicken thighs or breasts, sliced into bite-sized pieces

1 cup uncooked jasmine rice

1 cup low-sodium soy sauce

1/2 cup mirin (Japanese sweet rice wine)

1/4 cup brown sugar

2 tablespoons honey

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

2 tablespoons vegetable oil

1 tablespoon minced garlic

1 tablespoon minced ginger

2 green onions, sliced (for garnish)

1 sesame seeds (for garnish)

Steamed broccoli or carrots (optional, for added nutrition)

Instructions
 

Cook the Rice: Begin by cooking the jasmine rice according to package instructions. This usually involves rinsing the rice, combining it with water in a pot (typically a 1:1 ratio), bringing it to a boil, then reducing to a simmer, covering, and cooking for about 15-20 minutes.

    Prepare the Teriyaki Sauce: In a medium saucepan over medium heat, combine the soy sauce, mirin, brown sugar, and honey. Stir until the sugar is dissolved. Add the minced garlic and ginger, and let it simmer for about 5 minutes.

      Thicken the Sauce: Stir in the cornstarch-water mixture, and continue stirring until the sauce thickens, about 2-3 minutes. Remove from heat and set aside.
