Sweet and Savory Pineapple Chicken and Rice Recipe

Ingredients
  

2 cups cooked jasmine rice

1 lb boneless, skinless chicken thighs, cubed

1 cup fresh pineapple, diced

1/2 cup red bell pepper, diced

1/2 cup green onions, sliced

3 cloves garlic, minced

1 tablespoon ginger, grated

1/4 cup soy sauce

1 tablespoon honey

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 tablespoon olive oil

Salt and pepper, to taste

Sesame seeds, for garnish (optional)

Fresh cilantro, for garnish (optional)

Instructions
 

Marinate the Chicken: In a bowl, combine soy sauce, honey, rice vinegar, sesame oil, minced garlic, grated ginger, salt, and pepper. Add the cubed chicken thighs and marinate for at least 30 minutes (or overnight for deeper flavor).

    Cook the Chicken: In a large skillet or wok, heat olive oil over medium-high heat. Remove the chicken from the marinade (keeping the marinade) and add it to the skillet. Cook until the chicken is browned and cooked through, about 7-10 minutes.

      Add Vegetables: Stir in the diced red bell pepper and cook for about 3 minutes until slightly tender. Add the diced pineapple and cook for another 2 minutes.

        Thicken the Sauce: Pour the reserved marinade into the skillet and bring to a simmer. Cook for about 3-4 minutes, allowing the sauce to thicken slightly.

          Combine with Rice: Add the cooked jasmine rice to the skillet, stirring well to incorporate everything. Cook for an additional 2-3 minutes, allowing the rice to soak up the flavors.

            Finish with Green Onions: Stir in the sliced green onions and cook for an extra minute. Taste and adjust seasoning if necessary.

              Serve: Remove from heat, and serve hot. Garnish with sesame seeds and fresh cilantro if desired.
