1 medium eggplant, diced

2 medium zucchini, sliced

1 large red bell pepper, chopped

1 cup cherry tomatoes, halved

1 cup green beans, trimmed and cut into 1-inch pieces

1 large onion, diced

3 cloves garlic, minced

4 cups vegetable broth

1 teaspoon dried thyme

1 teaspoon dried basil

1 teaspoon smoked paprika

1 tablespoon olive oil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Prepare Your Ingredients: Wash and cut the vegetables as specified above. This will help you work efficiently while cooking.

    Sauté the Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and minced garlic. Sauté until the onion is translucent, about 5 minutes.

      Cook the Vegetables: Add the eggplant and bell pepper to the pot. Cook for another 5-7 minutes, stirring occasionally, until they begin to soften.

        Add Remaining Vegetables: Stir in the zucchini, green beans, and cherry tomatoes. Cook for an additional 5 minutes, allowing the vegetables to soften further.

          Pour in the Broth: Add the vegetable broth, dried thyme, dried basil, smoked paprika, salt, and pepper to the pot. Stir well to combine all the ingredients.

            Simmer the Stew: Bring the stew to a gentle boil, then reduce the heat to low. Cover and let it simmer for 20-25 minutes, until all the vegetables are tender and the flavors meld together.

              Serve and Garnish: Taste and adjust seasoning if needed. Serve hot in bowls, garnished with fresh basil leaves if desired.
