1/4 cup olive oil

2 tablespoons apple cider vinegar

Instructions

Prepare the Kale: Rinse the kale under cold water, remove the stems, and chop them into bite-sized pieces. Use a kitchen towel to dry the kale thoroughly or use a salad spinner.

Make the Dressing: In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper until well combined.

Combine the Salad: In a large salad bowl, add the chopped kale, sliced peaches, blueberries, crumbled feta cheese, sliced almonds, and red onion.

Dress the Salad: Pour the dressing over the salad mixture and toss gently to combine, ensuring that all ingredients are evenly coated with the dressing.

Taste and Adjust: Taste the salad and adjust seasoning if needed by adding more salt, pepper or a splash of vinegar.

Serve: Let the salad sit for about 10 minutes to allow the flavors to meld before serving. Enjoy it as a refreshing side dish or a light main course!
