4 cups fresh corn kernels (about 5-6 ears of corn)

1 cup cherry tomatoes, halved

1/2 red onion, finely chopped

1/2 red bell pepper, diced

1 cup cucumber, diced

1/4 cup fresh cilantro, chopped

1/4 cup feta cheese, crumbled

Juice of 2 limes

3 tablespoons olive oil

Salt and pepper to taste

Prep Corn: If using fresh corn, bring a large pot of salted water to a boil. Add the corn and cook for 5-7 minutes until tender. Drain and let cool before slicing the kernels from the cob. Alternatively, you can grill the corn for a smoky flavor — just char the corn on a hot grill for 10 minutes, turning occasionally.

    Combine Vegetables: In a large mixing bowl, combine the corn kernels, cherry tomatoes, red onion, red bell pepper, and cucumber. Gently toss to mix the vegetables evenly.

      Make Dressing: In a separate small bowl, whisk together the lime juice, olive oil, salt, and pepper. Taste and adjust seasoning as needed.

        Add Herbs and Cheese: Pour the dressing over the salad and add the chopped cilantro and crumbled feta cheese. Gently toss everything to combine without mashing the ingredients.
