Summer Corn and Zucchini Chowder

3 cups fresh corn kernels (about 6-8 ears of corn)

2 medium zucchinis, diced

1 medium onion, chopped

2 cloves garlic, minced

4 cups vegetable broth

1 cup coconut milk (or heavy cream for non-vegan version)

1 medium potato, peeled and diced

1 red bell pepper, diced

2 tablespoons olive oil

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh basil or chives for garnish

Optional: A squeeze of fresh lime juice for brightness

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion, and sauté until translucent, about 5 minutes. Stir in the minced garlic and smoked paprika, cooking for another 1-2 minutes until fragrant.

    Add the Vegetables: Toss in the diced zucchini, red bell pepper, and potato. Stir well to combine, cooking for about 3-4 minutes until the vegetables start to soften.

      Pour in the Broth: Add the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to a simmer and let it cook for about 10-15 minutes, or until the potatoes are fork-tender.

        Incorporate the Corn: Stir in the fresh corn kernels and the coconut milk. Let the chowder simmer for another 5-7 minutes until heated through. If the chowder is too thick, feel free to add a bit more broth or water to reach your desired consistency.

          Season to Taste: Season with salt, pepper, and a squeeze of lime juice if desired. Adjust the flavors according to your taste.

            Blend for Creaminess (optional): For a silky texture, you can use an immersion blender to puree part of the chowder. Blend until smooth, or leave it chunky depending on your preference.
