2 large red onions, thinly sliced

2 tablespoons sumac

2 tablespoons olive oil

1 tablespoon lemon juice

1 teaspoon salt

1 teaspoon black pepper

Fresh parsley, chopped (for garnish)

Optional: 1/2 teaspoon red pepper flakes (for heat)

Instructions
 

In a large mixing bowl, combine the thinly sliced red onions with salt. Let them sit for about 15 minutes. This will help to soften the onions and draw out some moisture.

    After 15 minutes, rinse the onions under cold water to remove excess salt and drain well.

      In a small bowl, whisk together the olive oil, lemon juice, sumac, black pepper, and optional red pepper flakes until well combined.

        Add the rinsed onions to the dressing and toss everything together until the onions are well-coated.

          Let the mixture marinate for at least 30 minutes at room temperature to allow the flavors to meld. For even better flavor, you can refrigerate it for a couple of hours or overnight.

            Before serving, give the onions a quick toss and garnish with freshly chopped parsley.

              Serve as a flavorful topping for grilled meats, in salads, or as part of a mezze platter.
