Strawberry Peach Crisp

4 cups fresh strawberries, hulled and halved

4 cups fresh peaches, pitted and sliced

1 cup granulated sugar (divided)

1 teaspoon vanilla extract

1 tablespoon lemon juice

1 cup rolled oats

1/2 cup all-purpose flour

1/2 cup brown sugar, packed

1 teaspoon ground cinnamon

1/2 teaspoon salt

1/2 cup unsalted butter, melted

Vanilla ice cream or whipped cream for serving (optional)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large mixing bowl, combine the strawberries and peaches. Add 1/2 cup of the granulated sugar, vanilla extract, and lemon juice. Gently toss until the fruit is well coated. Pour the mixture into a greased 9x13-inch baking dish.

      In a separate bowl, mix together the rolled oats, all-purpose flour, brown sugar, cinnamon, and salt. Stir in the melted butter until the mixture is crumbly.

        Evenly sprinkle the oat mixture over the fruit in the baking dish.

          Bake in the preheated oven for about 35-40 minutes or until the top is golden brown and the fruit is bubbling.

            Remove from the oven and let it cool slightly before serving.

              Serve warm, topped with a scoop of vanilla ice cream or a dollop of whipped cream, if desired.
