1 avocado, diced

1/4 cup fresh mint leaves, chopped

1/4 cup fresh cilantro leaves, chopped

1/4 cup chopped peanuts (optional, for garnish)

2 tablespoons sesame seeds (optional, for garnish)

For the Spicy Ginger Dressing:

3 tablespoons fresh ginger, grated

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon honey or maple syrup

2 tablespoons rice vinegar

1 tablespoon sesame oil

1 teaspoon chili garlic sauce (adjust based on spice preference)

Salt and pepper to taste
