Spinach and Feta Quesadillas (20 minutes)

Packed with fresh spinach, tangy feta, and gooey mozzarella, these quesadillas are simple to make and perfect for any occasion. Sauté garlic and spinach, mix with cheese, and grill until golden brown. Serve with a side of sour cream or fresh salsa for a delightful twist. Ingredients
  

2 cups fresh spinach leaves, washed and chopped

1 cup feta cheese, crumbled

1 cup shredded mozzarella cheese

4 large flour tortillas

1 tablespoon olive oil

1 clove garlic, minced

1/2 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

Sour cream, for serving (optional)

Fresh salsa or diced tomatoes, for serving (optional)

Instructions
 

Prepare the Filling: In a skillet over medium heat, add the olive oil. Once heated, sauté the minced garlic until fragrant, about 30 seconds.

    Add Spinach: Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Season with salt, pepper, and red pepper flakes if desired. Remove from heat.

      Combine Cheeses: In a bowl, mix the wilted spinach and garlic with crumbled feta and shredded mozzarella cheese. Stir until fully combined.

        Assemble Quesadillas: Heat a non-stick skillet or griddle over medium heat. Place one tortilla in the pan, spreading a generous amount of the spinach and cheese mixture evenly over half of the tortilla. Fold the other half over to cover the filling.

          Cook the Quesadilla: Cook for about 3-4 minutes, or until the underside is golden brown and the cheese starts to melt. Carefully flip and cook the other side for an additional 3-4 minutes.

            Repeat: Remove the cooked quesadilla to a cutting board and repeat with the remaining tortillas and filling.

              Slice and Serve: Cut each quesadilla into wedges. Serve warm with sour cream and fresh salsa on the side.
