Spicy Turkey Cauliflower Rice

1 pound ground turkey

1 medium head of cauliflower, riced (about 4 cups)

1 tablespoon olive oil

1 small onion, diced

3 cloves garlic, minced

1 bell pepper (red or green), diced

2 teaspoons chili powder

1 teaspoon cumin

1/2 teaspoon smoked paprika

1/4 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

1 cup diced tomatoes (canned or fresh)

1 cup corn kernels (frozen or fresh)

1 cup black beans, drained and rinsed (optional)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prep the Cauliflower: Start by ricing the cauliflower using a food processor or a box grater. Set aside.

    Cook the Turkey: In a large skillet, heat the olive oil over medium heat. Add the diced onions and cook for about 2-3 minutes until softened. Add in the minced garlic, and sauté for another minute until fragrant.

      Brown the Ground Turkey: Increase the heat to medium-high and add the ground turkey to the skillet. Break it apart with a spatula and cook until browned and no longer pink, about 5-7 minutes.

        Add the Veggies and Spices: Stir in the diced bell pepper, chili powder, cumin, smoked paprika, red pepper flakes, salt, and pepper. Cook for another 3-4 minutes until the bell pepper is slightly tender.

          Mix in the Cauliflower Rice: Add the riced cauliflower, diced tomatoes, corn, and black beans (if using) to the skillet. Stir well to combine all ingredients. Cook for an additional 5-7 minutes, stirring occasionally, until the cauliflower is tender and heated through.

            Taste and Adjust: Taste the mixture and adjust seasonings as needed. If you prefer more heat, sprinkle in extra red pepper flakes.
