Spicy Jalapeno Chicken

1 lb boneless, skinless chicken breasts

3 tablespoons olive oil

2 fresh jalapeno peppers, finely chopped (seeds removed for less heat)

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon cayenne pepper (adjust to taste)

1 teaspoon ground cumin

Salt and black pepper to taste

Juice of 1 lime

2 tablespoons fresh cilantro, chopped

1/2 cup shredded Monterey Jack cheese

Lime wedges, for serving

Instructions
 

Marinate the Chicken: In a large bowl, mix together the olive oil, chopped jalapenos, minced garlic, smoked paprika, cayenne pepper, ground cumin, lime juice, salt, and black pepper. Add the chicken breasts and coat evenly with the marinade. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

    Preheat the Grill: Preheat your grill or griddle pan to medium-high heat.

      Grill the Chicken: Remove the chicken from the marinade, letting any excess liquid drip off. Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the chicken reaches an internal temperature of 165°F (74°C) and has nice grill marks.

        Add Cheese: In the last minute of cooking, sprinkle the shredded Monterey Jack cheese on top of the chicken to melt. Close the grill lid to help the cheese melt evenly.

          Rest and Slice: Once cooked, remove the chicken from the grill and let it rest for about 5 minutes. Then slice it into bite-sized pieces.
