Southern Fried Salmon Patties

Ingredients
  

2 cans (14.75 oz each) salmon, drained and flaked

1/2 cup breadcrumbs (preferably homemade or panko for extra crunch)

1/4 cup red bell pepper, finely diced

1/4 cup green onions, finely chopped

2 large eggs, beaten

2 tbsp mayonnaise

1 tbsp Dijon mustard

1 tsp Old Bay seasoning (or your favorite seafood seasoning)

Salt and black pepper, to taste

1/4 cup fresh parsley, chopped

Oil for frying (vegetable or canola)

Instructions
 

In a large mixing bowl, combine the flaked salmon, breadcrumbs, diced red bell pepper, chopped green onions, and parsley.

    In a separate small bowl, whisk together the beaten eggs, mayonnaise, Dijon mustard, Old Bay seasoning, salt, and black pepper.

      Pour the egg mixture into the salmon mixture and stir until fully combined. The mixture should hold together; if it seems too wet, add more breadcrumbs as needed.

        Form the mixture into small patties (about 2-3 inches in diameter and 1/2 inch thick).

          Heat about 1/4 inch of oil in a large skillet over medium heat. Once hot, carefully place the patties in the skillet, making sure not to overcrowd.

            Fry the patties for about 4-5 minutes on each side or until golden brown and crispy. Keep an eye on the heat to ensure they don’t burn.

              Remove the patties from the skillet and place them on a paper towel-lined plate to drain excess oil.

                Serve hot with lemon wedges and a side of tartar sauce or your favorite dipping sauce.
