8 oz smoked salmon

1 medium cucumber

1 cup hummus (store-bought or homemade)

1 tbsp lemon juice

1 tbsp fresh dill, chopped (or 1 tsp dried dill)

Salt and pepper to taste

4-6 whole wheat or spinach wraps (optional)

Fresh arugula or spinach leaves for garnish

Prepare the Cucumber: Wash the cucumber thoroughly. Using a vegetable peeler or mandoline, slice the cucumber into thin strips. Aim for long, even slices that can later be rolled.

    Make the Hummus Mixture: In a small bowl, combine the hummus, lemon juice, dill, salt, and pepper. Mix until well combined.

      Assemble the Roll-Ups:

        - If using wraps, place one wrap on a flat surface. Spread a generous layer of the hummus mixture evenly across the wrap.

          - Lay slices of smoked salmon on top of the hummus, covering the surface.

            - Add a few strips of cucumber and some arugula or spinach leaves on top.

              Roll it Up: Starting from one edge, carefully roll the wrap tightly. Continue the rolling process until you reach the opposite edge, sealing the roll if desired.
