Sheet Pan Sausage and Veggies

Ingredients
  

1 pound of Italian sausage links (mild or spicy, based on preference)

2 cups baby potatoes, halved

1 bell pepper (red or yellow), sliced

1 medium red onion, diced

2 cups broccoli florets

4 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh parsley, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Baking Sheet: Line a large baking sheet with parchment paper for easy cleanup.

      Prep the Veggies: In a large bowl, combine the halved baby potatoes, sliced bell pepper, diced red onion, and broccoli florets.

        Season the Veggies: Drizzle the olive oil over the vegetables and sprinkle with minced garlic, oregano, smoked paprika, salt, and pepper. Toss everything together until well coated.

          Arrange the Ingredients: Spread the seasoned veggies evenly on one side of the lined baking sheet. Place the sausage links on the other side, ensuring they are not touching the vegetables to allow for even cooking.

            Bake: Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the sausages are browned and cooked through, and the veggies are tender and slightly caramelized. Stir the veggies halfway through for even roasting.
