Seafood Stuffed Shells

12 large pasta shells

1 cup ricotta cheese

1 cup cooked shrimp, chopped

1 cup cooked scallops, chopped

1/2 cup grated Parmesan cheese

1 cup shredded mozzarella cheese (plus extra for topping)

1/2 cup fresh parsley, chopped

2 cloves garlic, minced

1 tablespoon lemon juice

1 teaspoon dried oregano

Salt and pepper to taste

2 cups marinara sauce

Olive oil for drizzling

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Shells: In a large pot of salted boiling water, cook the pasta shells according to package instructions until al dente. Drain and set aside.

      Prepare the Filling: In a mixing bowl, combine the ricotta cheese, chopped shrimp, chopped scallops, grated Parmesan cheese, half of the shredded mozzarella, parsley, garlic, lemon juice, oregano, salt, and pepper. Mix thoroughly until well combined.

        Stuff the Shells: Take each cooked shell and fill it with the seafood filling, placing them open side up in a greased baking dish.

          Add Marinara Sauce: Pour the marinara sauce evenly over the stuffed shells, ensuring they are well covered. Sprinkle the remaining mozzarella cheese on top.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

              Serve: Allow the dish to cool for about 5 minutes before serving. Drizzle with olive oil and garnish with extra parsley for a fresh touch.
