2 cups cold cooked jasmine rice

1 lb boneless, skinless chicken thighs, diced

1/4 cup soy sauce

2 tablespoons homemade or store-bought teriyaki sauce

2 tablespoons sesame oil

1 tablespoon vegetable oil

4 green onions, finely chopped

2 cloves garlic, minced

1/2 cup peas and carrots (fresh or frozen)

3 large eggs

Salt and pepper to taste

Sesame seeds (for garnish)

Nori strips (for garnish)

Instructions
 

Marinate the Chicken: In a bowl, combine diced chicken thighs with soy sauce and teriyaki sauce. Let it marinate for at least 20 minutes for enhanced flavor.

    Prepare the Fried Rice: Heat vegetable oil in a large skillet or wok over medium-high heat. Add marinated chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.

      Sauté Aromatics: In the same skillet, add sesame oil. Once hot, add minced garlic and sauté for about 30 seconds until fragrant.

        Add Vegetables: Add the peas and carrots to the skillet and stir-fry for 2-3 minutes until tender. Then, add the cold cooked jasmine rice, breaking up any clumps, and stir to combine everything.

          Cook the Eggs: Push the rice and vegetable mixture to one side of the skillet. Crack the eggs into the empty side and scramble them until fully cooked. Once done, mix the eggs into the rice.

            Combine Everything: Add the cooked chicken back to the skillet. Stir everything together, allowing the rice to absorb any remaining flavors. Season with salt and pepper to taste.

              Finish and Serve: Sprinkle chopped green onions on top and stir one last time. Remove from heat. Garnish individual portions with sesame seeds and nori strips before serving.
