1 teaspoon Dijon mustard

1 tablespoon capers, rinsed and drained

1 tablespoon fresh parsley, chopped

1 clove garlic, minced

Salt and pepper to taste

Optional toppings: Slices of avocado, cherry tomatoes, or red onion

Instructions

Start by toasting the whole grain bread slices until golden brown and crispy.

While the bread is toasting, drain the sardines and place them in a bowl.

Add the lemon juice, Dijon mustard, minced garlic, and capers to the bowl with sardines. Use a fork to gently break the sardines into smaller pieces while mixing in the ingredients until well combined.

Taste the mixture and season with salt and pepper to your liking.

Once the toast is ready, remove it from the toaster or grill and place it on plates.

Spoon the sardine mixture generously over each slice of toast.

Finish with a sprinkle of fresh parsley and, if desired, add optional toppings like avocado slices, halved cherry tomatoes, or thinly sliced red onion.
