1 cup salsa verde (store-bought or homemade)

1 medium onion, diced

2 cloves garlic, minced

1 medium zucchini, diced

1 cup corn kernels (fresh or frozen)

1 can black beans, rinsed and drained

1 tsp ground cumin

1 tsp smoked paprika

1 tsp chili powder

Salt and pepper to taste

1 tbsp olive oil

1 cup cooked shredded chicken (optional for a heartier soup)

1 cup tortilla strips (store-bought or homemade)

Fresh cilantro, chopped (for garnish)

Avocado, diced (for topping)

Instructions
 

In a large pot, heat olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until soft and translucent.

    Stir in the minced garlic and cook for an additional minute until fragrant.
