Salmon and Couscous Bowl Recipe

Ingredients
  

2 salmon fillets (6 oz each)

1 cup couscous

1 ¼ cups vegetable broth

1 cup cherry tomatoes, halved

1 medium cucumber, diced

1 avocado, sliced

¼ cup red onion, finely chopped

1 lemon (zested and juiced)

1 orange (juiced)

2 tablespoons olive oil

1 teaspoon honey

Salt and pepper to taste

Fresh parsley or cilantro for garnish

Instructions
 

Prepare the Couscous: In a medium saucepan, bring the vegetable broth to a boil. Once boiling, stir in couscous, cover, and remove from heat. Let it sit for about 5 minutes, then fluff with a fork.

    Cook the Salmon: While the couscous is resting, heat 1 tablespoon of olive oil in a skillet over medium heat. Season the salmon fillets with salt and pepper. Once the oil is hot, place the salmon skin side down and cook for about 4-5 minutes, then flip and cook for an additional 2-3 minutes until cooked through and flaky. Remove from the skillet and set aside.

      Prepare the Dressing: In a small bowl, whisk together the lemon juice, orange juice, honey, remaining olive oil, lemon zest, salt, and pepper until well combined.

        Combine Ingredients: In a large bowl, combine the cooked couscous, cherry tomatoes, cucumber, red onion, and half of the dressing. Toss gently to mix.
