Rigatoni with Sausage, Tomatoes, and Zucchini

12 oz rigatoni pasta

1 lb Italian sausage (mild or spicy, according to preference)

2 tbsp olive oil

1 medium onion, diced

3 cloves garlic, minced

1 medium zucchini, diced

1 red bell pepper, diced

1 (14.5 oz) can of diced tomatoes, with juices

1 tsp dried oregano

1 tsp dried basil

Salt and pepper to taste

1 cup fresh spinach

1/2 cup grated Parmesan cheese (plus more for serving)

Fresh basil leaves for garnish

Cook the Rigatoni: In a large pot, bring salted water to a boil. Add rigatoni and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

    Brown the Sausage: In a large skillet over medium heat, add olive oil. Once hot, add the Italian sausage, breaking it apart with a spoon. Cook until browned and cooked through, about 5-7 minutes. Remove the sausage from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the diced onion and cook until translucent, about 3-4 minutes. Stir in the garlic, zucchini, and red bell pepper, cooking for an additional 5 minutes until the vegetables are tender.

        Combine Ingredients: Return the cooked sausage to the skillet and add the diced tomatoes (with juices), oregano, basil, salt, and pepper. Stir well to combine and let simmer for about 5 minutes to allow flavors to meld.

          Add Spinach and Pasta: Stir in the fresh spinach until wilted, then add the cooked rigatoni to the skillet. If the mixture seems too dry, add a bit of the reserved pasta water to reach your desired consistency.

            Finish and Serve: Remove from heat and stir in the grated Parmesan cheese. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh basil leaves and an additional sprinkle of Parmesan cheese if desired.
