Ingredients

2 cups watermelon, cubed and blended

1/2 cup almond milk (or any milk of choice)

1/4 cup chia seeds

1 tablespoon honey or maple syrup (adjust to taste)

1/2 teaspoon vanilla extract

1/4 cup granola (for topping)

Fresh mint leaves (for garnish)

Instructions

Prepare the Watermelon Puree: In a blender, puree the cubed watermelon until smooth. You may strain it if you prefer a smoother texture, but this is optional.

Mix Chia Pudding Ingredients: In a medium bowl, combine the watermelon puree, almond milk, honey or maple syrup, and vanilla extract. Stir in the chia seeds until well combined.

Let it Set: Cover the bowl and place it in the refrigerator for at least 2 hours or overnight to allow the chia seeds to expand and the pudding to thicken.

Assemble the Jars: Once the chia pudding has thickened, layer it in jars. Start with a spoonful of the chia pudding, then add a layer of granola, followed by another layer of pudding, and repeat until the jars are filled.

Garnish and Serve: Top with fresh mint leaves and additional granola if desired. Enjoy your refreshing breakfast on the go!
