Ingredients
  

2 cups fresh rhubarb, chopped

1 cup granulated sugar

4 cups water, divided

1 cup freshly squeezed lemon juice (about 4-6 lemons)

Lemon slices and fresh mint for garnish

Optional: a pinch of salt to enhance flavor

Make the Rhubarb Syrup: In a medium saucepan, combine the chopped rhubarb and sugar with 1 cup of water. Bring the mixture to a boil over medium heat, stirring frequently to dissolve the sugar. Once boiling, reduce the heat and let it simmer for about 10-15 minutes, or until the rhubarb has completely softened and broken down.

    Strain the Syrup: After simmering, remove the pan from heat. Using a fine mesh strainer, strain the mixture into a bowl, discarding the solids. You should have a vibrant pink rhubarb syrup. Let it cool to room temperature.

      Combine Ingredients: In a large pitcher, mix the cooled rhubarb syrup, the freshly squeezed lemon juice, and the remaining 3 cups of water. Stir well to combine. Taste and adjust the sweetness or acidity to your preference; add more sugar or lemon juice if desired.

        Chill and Serve: Place the lemonade in the refrigerator to chill for at least 30 minutes. Serve in tall glasses over ice, garnished with lemon slices and fresh mint sprigs. For an extra zing, add a pinch of salt to each glass.
