Ingredients

1 lb boneless chicken thighs, cut into bite-sized pieces

1 tablespoon vegetable oil

1 tablespoon butter

1 medium onion, finely chopped

3 cloves garlic, minced

1 tablespoon ginger, grated

1 can (14 oz) tomato puree

1 cup heavy cream

2 teaspoons garam masala

1 teaspoon cumin powder

1 teaspoon paprika

1 teaspoon turmeric powder

Salt and pepper to taste

Fresh cilantro for garnish

Cooked rice or naan for serving

Instructions

Marinate the Chicken: In a bowl, combine the chicken pieces with salt, pepper, and 1 teaspoon of garam masala. Let it marinate for at least 15 minutes while you prepare the other ingredients.

Cook the Chicken: In a large skillet, heat the vegetable oil over medium-high heat. Add the marinated chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

Sauté Aromatics: In the same skillet, add the butter. Once melted, add the chopped onions and sauté until they turn golden brown, about 5 minutes. Then, add the minced garlic and grated ginger. Cook for another 1-2 minutes until fragrant.

Prepare the Sauce: Stir in the tomato puree, remaining garam masala, cumin, paprika, and turmeric. Let the mixture simmer for about 5 minutes, allowing the flavors to meld together.

Add Cream and Chicken: Reduce the heat to low and slowly stir in the heavy cream until well combined. Return the chicken to the skillet, ensuring it is well coated in the creamy sauce. Simmer for another 5 minutes. Adjust seasoning with salt and pepper to taste.

Serve: Remove from heat and garnish with fresh cilantro. Serve hot over cooked rice or with warm naan.
