1 cup all-purpose flour

1/2 cup rolled oats

2 tablespoons brown sugar

1 tablespoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

2 large eggs

1 cup pumpkin puree (canned or fresh)

1 cup milk (dairy or non-dairy)

1/4 cup vegetable oil or melted coconut oil

1 teaspoon vanilla extract

Optional toppings: maple syrup, whipped cream, chopped nuts, or chocolate chips

Instructions
 

Preheat your waffle maker according to the manufacturer’s instructions so it’s hot and ready.

    In a large mixing bowl, whisk together the flour, rolled oats, brown sugar, baking powder, cinnamon, nutmeg, ginger, and salt until well combined.

      In another bowl, whisk the eggs until frothy, then add the pumpkin puree, milk, vegetable oil, and vanilla extract. Mix until smooth and well incorporated.

        Slowly pour the wet ingredients into the dry ingredients, gently folding them together until just combined. Be careful not to overmix; a few lumps are perfectly fine.

          Lightly grease the waffle maker with cooking spray or a little oil to prevent sticking. Pour an appropriate amount of batter onto the waffle maker (usually about 1/2 to 2/3 cup, depending on the size of your waffle maker) and close the lid.

            Cook the waffles according to your waffle maker’s instructions, usually for about 4-6 minutes, until they are golden brown and crisp.

              Carefully remove the waffles and repeat with the remaining batter.
