Ingredients

8 slices of thick bread (brioche or challah work best)

4 large eggs

1 cup milk (dairy or non-dairy)

1 cup pumpkin puree (canned or fresh)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon allspice

1/4 teaspoon salt

Butter or oil for cooking

For the Homemade Pumpkin Syrup:

1 cup maple syrup

1/2 cup pumpkin puree

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon ground ginger

Pinch of salt

Instructions

Make the Pumpkin Mixture: In a large mixing bowl, whisk together the eggs, milk, pumpkin puree, vanilla extract, cinnamon, nutmeg, allspice, and salt until well combined.

Prepare the French Toast: Preheat a large skillet or griddle over medium heat and add a pat of butter or a drizzle of oil. Dip each slice of bread into the pumpkin mixture, ensuring both sides are coated, but do not let it soak for too long.

Cook the French Toast: Once the skillet is hot, add the coated bread slices in batches, cooking for about 3-4 minutes on each side or until golden brown. Add more butter or oil between batches if necessary.

Make the Pumpkin Syrup: While the French toast is cooking, combine all the syrup ingredients in a small saucepan over medium heat. Stir to combine and let it simmer lightly for about 5-7 minutes, allowing the flavors to meld. Remove from heat and set aside.

Serve: Once the French toast is cooked, stack it on plates and drizzle generously with the warm homemade pumpkin syrup. Add a sprinkle of powdered sugar or whipped cream on top for an extra festive touch if desired.

Enjoy: Serve immediately and enjoy the cozy flavors of fall in every bite!
