1 lb boneless, skinless chicken thighs, cut into 1-inch cubes

1/4 cup honey

1/4 cup soy sauce

3 cloves garlic, minced

1 tablespoon sriracha (adjust to taste)

1 tablespoon olive oil

1 teaspoon ground ginger

1 teaspoon black pepper

1/2 teaspoon salt

1 tablespoon sesame seeds (for garnish)

Fresh cilantro, chopped (for garnish)

Bamboo skewers (soaked in water for 30 minutes, if using)

Instructions
 

In a mixing bowl, combine honey, soy sauce, minced garlic, sriracha, olive oil, ground ginger, black pepper, and salt. Whisk until well blended to create the marinade.

    Add the cubed chicken thighs to the marinade, ensuring all pieces are thoroughly coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.

      Preheat your grill or grill pan over medium-high heat.

        Thread the marinated chicken pieces onto the soaked bamboo skewers.

          Grill the skewers for 6-8 minutes on each side, or until the chicken is cooked through and has nice grill marks. Baste occasionally with any leftover marinade.

            Once cooked, remove the skewers from the grill and let them rest for a few minutes.

              Garnish with sesame seeds and chopped cilantro before serving.
