Peaches and Cream Cheesecake Bars

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 tablespoons sugar

2 (8 oz) packages cream cheese, softened

1 cup sugar

1 teaspoon vanilla extract

2 large eggs

1 cup sour cream

2 cups fresh peaches, peeled and diced

1 tablespoon lemon juice

2 tablespoons cornstarch

Preheat your oven to 325°F (160°C). Line a 9x9-inch baking pan with parchment paper, leaving some overhang for easy removal.

    In a medium bowl, combine the graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Mix until the crumbs are evenly coated. Press this mixture firmly into the bottom of the prepared baking pan to form a crust.

      In a large mixing bowl, beat the softened cream cheese with 1 cup of sugar and the vanilla extract until smooth and creamy.

        Add the eggs, one at a time, beating well after each addition to incorporate fully.

          Stir in the sour cream until well combined. Set aside.

            In a separate bowl, mix the diced peaches with lemon juice and cornstarch until the peaches are evenly coated.

              Spread half of the cheesecake batter over the prepared crust. Gently layer the diced peaches over the batter, then pour the remaining cheesecake batter on top.

                Use a knife or a toothpick to swirl the peach mixture into the cheesecake batter lightly for a marbled effect.

                  Bake in the preheated oven for 45-55 minutes, or until the edges are set and the center has just a slight jiggle.

                    Remove from the oven and allow the bars to cool to room temperature. Once cool, refrigerate for at least 4 hours, or overnight for best results.

                      When ready to serve, lift the bars out of the pan using the parchment overhang and cut into squares. Optionally, top with whipped cream and additional diced peaches.
