2 ripe peaches, pitted and chopped

3 tablespoons honey

2 tablespoons Dijon mustard

1/4 cup balsamic vinegar

1/2 cup extra virgin olive oil

Salt and pepper to taste

Fresh basil or mint leaves for garnish (optional)

Instructions
 

In a blender or food processor, combine the chopped peaches, honey, Dijon mustard, and balsamic vinegar. Blend until smooth.

    Keep the blender running and slowly drizzle in the olive oil until the mixture is well emulsified and creamy.
