Ingredients

2 cups all-purpose flour

1 cup granulated sugar

1/2 cup unsalted butter, softened

1 cup peaches, peeled and diced

1 cup blackberries, fresh or frozen

1/2 cup buttermilk

2 large eggs

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon vanilla extract

1/2 teaspoon salt

1 teaspoon ground cinnamon (for topping)

1/4 cup brown sugar (for topping)

1/2 cup chopped nuts (optional, for topping)

Instructions

Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan or a square baking dish with cooking spray.

In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. This should take about 3-4 minutes.

Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.

In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Slowly add this dry mixture to the wet ingredients, alternating with buttermilk. Mix until just combined—do not overmix.

Fold in the diced peaches and blackberries gently to prevent them from breaking apart.

Pour the batter into the prepared cake pan, smoothing out the top with a spatula.

In a small bowl, combine the ground cinnamon, brown sugar, and chopped nuts (if using) for the topping. Sprinkle this mixture evenly over the batter.

Bake in the preheated oven for 45-55 minutes or until a toothpick inserted into the center comes out clean.

Remove from the oven and allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Slice, serve, and enjoy! This cake pairs wonderfully with coffee or tea and is perfect for brunch or as a dessert.
