1 loaf of brioche or challah bread, cut into 1-inch cubes

6 large eggs

2 cups whole milk

1 cup heavy cream

1 cup brown sugar, packed

2 teaspoons vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

1/2 cup maple syrup (plus extra for serving)

1/4 cup powdered sugar (for serving)

Fresh berries (optional, for serving)

Prepare the Bread: In a large mixing bowl, combine the cubed bread with a sprinkle of cinnamon. Place it evenly in a greased 9x13-inch baking dish.

    Make the Custard: In another bowl, whisk together the eggs, milk, heavy cream, brown sugar, vanilla extract, remaining cinnamon, nutmeg, and salt until fully combined.

      Combine: Pour the custard mixture over the bread cubes, ensuring all pieces are well-coated. Gently press down to submerge any floating bread.

        Chill Overnight: Cover the baking dish with plastic wrap and refrigerate for at least 6 hours or overnight to allow the bread to soak up the custard.

          Preheat Oven: On the day of baking, preheat your oven to 350°F (175°C).

            Bake: Remove the plastic wrap and drizzle the casserole with maple syrup. Bake uncovered for 45-55 minutes, or until the top is golden brown and the custard is set.
