Ingredients

1 loaf of brioche or challah bread, cut into thick slices

4 large eggs

2 cups heavy cream

1 cup whole milk

3/4 cup granulated sugar

1 tablespoon vanilla extract

1 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup brown sugar (for topping)

Fresh berries (for garnish, optional)

Whipped cream (for serving, optional)

Instructions

Prepare the Bread: Arrange the thick slices of brioche or challah in a single layer in a greased 9x13 inch baking dish. Overlap the slices if necessary.

Make the Custard Mixture: In a large mixing bowl, whisk together the eggs, heavy cream, whole milk, granulated sugar, vanilla extract, cinnamon, and salt until well combined and the sugar has dissolved.

Soak the Bread: Pour the custard mixture evenly over the bread slices, ensuring all pieces are well coated. Use your hands to gently push the bread down to soak up the liquid as much as possible. Cover the dish with plastic wrap and refrigerate overnight (or at least for 4 hours).

Preheat the Oven: When you’re ready to bake, preheat your oven to 350°F (175°C). Remove the dish from the refrigerator and let it sit at room temperature for about 20 minutes.

Add the Sugar Topping: Sprinkle the brown sugar evenly over the top of the soaked French toast. Use your fingers to help create an even layer.

Bake: Bake the French toast in the preheated oven for 40-45 minutes, or until the top is golden brown and the custard is set.

Caramelize (Optional): For that classic crème brûlée finish, you can use a kitchen torch to caramelize the top after baking. Move the torch in a sweeping motion until the brown sugar melts and forms a crunchy crust.

Serve: Let the French toast cool for a few minutes before slicing. Serve warm, garnished with fresh berries and a dollop of whipped cream, if desired.
