4 cups fresh mixed greens (spinach, arugula, and romaine)

2 large oranges, segmented and juiced

1 cup plain Greek yogurt

2 tablespoons honey

1 teaspoon vanilla extract

1/4 cup sliced almonds, toasted

1/2 cup shredded coconut

1/4 cup crumbled feta cheese

Salt and pepper to taste

Instructions
 

Start by preparing the orange segments. Peel the oranges, removing as much of the white pith as possible, and then segment them by cutting between the membranes. Reserve the juice for dressing.

    In a medium bowl, whisk together the Greek yogurt, honey, vanilla extract, and the reserved orange juice until smooth. Season with a pinch of salt and pepper to taste.

      In a large salad bowl, place the mixed greens as the base.

        Gently add the orange segments on top of the greens, followed by the toasted sliced almonds and shredded coconut.

          Drizzle the yogurt dressing over the salad, ensuring even coverage. Toss gently to combine all the ingredients without bruising the greens.

            Sprinkle the crumbled feta cheese on top before serving for an added burst of flavor.

              Serve immediately, or chill for about 15 minutes to let the flavors meld together before serving.
