4 salmon fillets (6 oz each)

1 cup orzo pasta

2 cups low-sodium chicken broth

1 medium onion, finely chopped

3 cloves garlic, minced

1 lemon (zest and juice)

1 cup cherry tomatoes, halved

2 cups spinach

2 tablespoons olive oil

Salt and pepper, to taste

Fresh parsley or dill, for garnish

¼ cup grated Parmesan cheese (optional)

Prepare the Ingredients: Start by ensuring all ingredients are measured out and ready. Zest and juice the lemon, chop the onion, slice the tomatoes, mince the garlic, and set aside.

    Cook the Orzo: In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the chopped onion and sauté for about 3 minutes until translucent. Stir in the minced garlic and cook for an additional 30 seconds.

      Add Orzo and Broth: Pour in the orzo pasta and stir to coat it in the oil. Then, add the chicken broth, lemon zest, and half of the lemon juice. Bring to a boil, then reduce the heat to low, cover, and simmer for about 8-10 minutes, stirring occasionally, until the orzo is al dente and most of the liquid has been absorbed.
