One-Pot Lemon Chicken Gnocchi Delight

Ingredients
  

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1 tablespoon olive oil

2 cloves garlic, minced

1 cup onion, diced

2 cups baby spinach

1 cup cherry tomatoes, halved

1 teaspoon lemon zest

1/4 cup fresh lemon juice

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1 package (16 oz) gnocchi (fresh or frozen)

3 cups chicken broth

1/2 cup heavy cream

1/4 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté Chicken: In a large pot or Dutch oven, heat olive oil over medium heat. Add the chicken pieces and season with salt, pepper, and oregano. Sauté until browned and cooked through, about 5-7 minutes. Remove chicken from the pot and set aside.

    Cook Aromatics: In the same pot, add diced onion and minced garlic. Sauté for 2-3 minutes until the onion is translucent and fragrant.

      Combine Ingredients: Stir in the cherry tomatoes and cook for an additional 2 minutes. Then, add the cooked chicken back to the pot, followed by spinach, lemon zest, lemon juice, and gnocchi.

        Add Broth: Pour in the chicken broth and bring the mixture to a boil. Reduce heat to a simmer and allow it to cook for about 5-7 minutes, or until the gnocchi are tender and floating.

          Finish Sauce: Lower the heat and stir in the heavy cream and Parmesan cheese until the sauce is creamy and well combined. Allow to simmer for another 2 minutes to let the flavors meld.
