4 boneless, skinless chicken thighs

1 cup uncooked jasmine rice

2 cups chicken broth

1/2 cup honey BBQ sauce (store-bought or homemade)

1 small onion, diced

2 cloves garlic, minced

1 cup frozen mixed vegetables (peas, carrots, corn)

1 tablespoon olive oil

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

Fresh parsley, chopped (for garnish)

Prepare the Chicken: Season the chicken thighs with smoked paprika, salt, and pepper.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent, about 2-3 minutes.

      Brown the Chicken: Push the onions to the side of the skillet and add the chicken thighs. Sear the chicken for about 4-5 minutes on each side until golden brown.

        Add Rice and Broth: Stir in the uncooked jasmine rice, mixing well with the onion and garlic. Pour in the chicken broth and bring the mixture to a gentle boil.
