Ingredients
  

1 lb flank steak, trimmed

1/4 cup balsamic vinegar

2 tablespoons olive oil

2 tablespoons honey

3 cloves garlic, minced

1 teaspoon dried rosemary

1 teaspoon salt

1/2 teaspoon black pepper

1 bell pepper, sliced (any color)

1 zucchini, sliced

1 cup cherry tomatoes, halved

1 red onion, sliced

Fresh basil leaves for garnish (optional)

Instructions
 

Marinate the Steak: In a small bowl, whisk together balsamic vinegar, olive oil, honey, minced garlic, dried rosemary, salt, and black pepper. Place the flank steak in a resealable plastic bag and pour the marinade over it. Seal the bag and refrigerate for at least 30 minutes, preferably 2 hours for better flavor.

    Preheat the Oven: Preheat your oven to 400°F (200°C).

      Prep the Veggies: While the steak marinates, wash and chop the bell pepper, zucchini, cherry tomatoes, and red onion. Place the vegetables in a large mixing bowl.

        Season the Veggies: Drizzle a little olive oil over the vegetables (about 1 tablespoon), and season with salt and pepper. Toss until well-coated.

          Prepare the Pan: Spread the seasoned vegetables evenly on one side of a baking sheet.

            Sear the Steak: Heat a large oven-safe skillet over medium-high heat. Remove the steak from the marinade (reserve the marinade for later) and sear it for about 2-3 minutes on each side until browned.

              Transfer to the Oven: After searing, pour the reserved marinade over the steak in the skillet. Carefully transfer the skillet to the oven and place the baking sheet with the veggies on the other side of the oven.

                Bake: Roast the steak and veggies in the oven for 10-12 minutes for medium-rare doneness (145°F). If you prefer your steak medium, roast for an additional 3-5 minutes.

                  Rest the Steak: Remove both the skillet and baking sheet from the oven. Let the steak rest for 5 minutes before slicing it against the grain.

                    Serve: Serve the sliced steak with a generous helping of roasted veggies. Garnish with fresh basil leaves if desired.
