2 cups sharp cheddar cheese, grated

1 cup cream cheese, softened

1/2 cup mayonnaise

1/4 cup diced pimentos, drained

1 tablespoon dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

1/4 teaspoon cayenne pepper (optional for a kick)

Salt and freshly ground black pepper to taste

1/4 cup finely chopped green onions (optional)

1/4 cup pecans, toasted and chopped (optional)

Instructions
 

In a large mixing bowl, combine the grated sharp cheddar cheese and softened cream cheese. Use a hand mixer or a sturdy spatula to mix until well blended and creamy.

    Add in the mayonnaise, diced pimentos, dijon mustard, garlic powder, onion powder, and cayenne pepper (if using). Mix until all ingredients are evenly incorporated.

      Taste the mixture and season it with salt and freshly ground black pepper to your liking. If you prefer, fold in the finely chopped green onions and toasted pecans for added flavor and texture.

        Once thoroughly mixed, transfer the pimento cheese to a serving bowl, cover it with plastic wrap, and refrigerate for at least 1 hour to allow the flavors to meld together.
