1 can (20 oz) crushed pineapple, drained

1 cup heavy whipping cream

1 cup powdered sugar

1 cup cream cheese, softened

1 teaspoon vanilla extract

1 cup graham cracker crumbs

5 tablespoons unsalted butter, melted

½ cup shredded coconut (optional, for garnish)

Maraschino cherries (for garnish, optional)

Prepare the Crust: In a medium bowl, combine the graham cracker crumbs and melted butter. Stir until well mixed. Press this mixture firmly into the bottom of an 8x8 inch square baking dish to form an even crust layer. Set aside.

    Make the Cream Filling: In a large mixing bowl, beat the softened cream cheese using an electric mixer until creamy. Gradually add in the powdered sugar and continue to beat until well combined.

      Whip the Cream: In a separate bowl, whip the heavy cream with the vanilla extract until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
